Well, I also dont mind with those two, even supported Aaron(one of Frederick's Aide) become ML since he's the one who can found out Elaine's disguise, trust her and always keeping away her ex-fiance flirt with her when MC in disguise, he is a fun character too. I am just like Will more lol, he really pitiful
I agree with your points, I also confused why prince being ML when clearly the chef in cover chapter 1(that what made me MTL-ing, simply curious when Will be ML lol). Maybe amount of individual PoV every character made other think Will is 1st ML, if I remember correctly Will and Sandra at least get five PoVs, Shin only get... 2?(one is spesial story, not count as main chapter)
Actually granpa is really care about her, why is he so strict to MC cuz her power gone rampage(cuz she remember that 1st prince sealed her sweet memories about him and didn't want he gone) when she still a kid and want MC controling her emotion(and her power), granpa got an injury because of it. He know MC be landlady and often visit her with disguise to enjoying her meal.
Shin get green light from granpa not only he's war buddy's grandson and care enough about Elaine, it's just granpa dont want MC get involved with royalty anymore. He had enough her granddaughter broken engagement with two prince, he thought royalty could protect her.
She's not a saint, but descendent of Water and Fertility Goddess, that's why memory seal failed and she gone rampage. I didnt remember how she sealing her memory after that, either Goddess interfering or she denial and forgot about prince. Other than purifiying, she can grow any plant with her song

Yeah I am wondering about this too, it's kinda.... weird. I can sort of understand him making this big show of banishing her (knowing full well she's perfectly capable, smart and has no interest in being in high society) to sort of make sure the rest of nobility doesn't look for her (that is if he truely knew all of that about her). Kind of like putting on a big act of being superstrict and dishing out justice so she can go live her best life without ever getting bothered again.
What I really just cannot reationalise is the stuff in her childhood. So he knows she is mega powerful but has no control over her powers yet. I guess I can see why he'd make sure she stays at home as much as possible - for her own protection and for everyone elses. I guess I can sort of kind of also see why he'd have her undergo all of this strict training if he assumes that more discipline will help her control her powers if they ever unlock again. I mean, it's a really shitty way of going about it, but I guess I can see why someone would jump to that conclusion. Kind of like the whole Elza from Frozen thing.
But what's the big deal with the princes? Like, so what if the engagement is broken, why does that mean she has to loose her memories? What sort of dumb logic is that? If they had let her keep her memories, she'd have understood why she has to train so much in order to get a hold of her powers, she'd have known to be careful because people might take advantage of her, and she'd have known her family is on her side and could have talked about how to best handle the problem together with them. But erasing the memories is just... Imagine if someone were to whipe your brain after every bad break-up hahahaha

On the bright side MC's father, mother, and brother. Also, a lot of her friends are working overtime to not only push through and prove how she's innocent. On top of that heaping on the political pressure on the king who was already busy and overworked. When he found out what his youngest son was up to he nearly fainted. The older crown Prince was calling bullshit on everything, but can't make too many moves since he needs more political backing. Also, more evidence to depose "Heroine." To be fair the Heroine IS a superlative enemy. She's great at seduction, manipulation, and gaining political backing. Think of a Margery Tyrell light with being good at healing powers. She uses those powers to gain the backing of the church as a "Saint."
More side-note spoiler. THE BROTHER IS MADE OF WIN. He made the childhood friend who manhandled her kneel at the gate of the house along with his dad for hours before letting them come in and explaining themselves.

I mean, I agree with half of your issues (and it doesn't help the latest update at dex just makes the king look like a retard).
Like a few comments said (ignoring my early complaints with her granpa *this isn't tough love. There was literally NO POINT to be that strict on his granddaughter if his main target was to have her a peaceful commoner life*, same issues with capture targets/young noblemen apparently not being able to do investigations on their own and trusting the first otherworldly beauty who cries her eyes out)
The recent manga chapter as one comment said, what was the NEED for a saint when HEALING MAGIC EXISTS? Kinda stupid way to verify a saint when her literal character from ch.01 alone if one listened carefully is actually a gold digger (yes, yes her inner malice was basically in overdrive thanks to a corrupt fairy and she does feel guilty in the end and apparently it was beyond her control)
PLUS, another comment also mentioned, after healing said guy, the least popular prince, got weak and the king doesn't care or notice his son getting sick and prioritized the saint proclamation?
