I would say it does matter, but Kubo never gave us an effing explanation on how souls age. Kind of important, given the fact that some Shinigami do seem to age during the timeskip, yet sometimes remained the same for decades.
Well, consider I can have understood some things wrong so don't take what I'll say like if i'm stating it to be a fact, it's my opinion and what I understood from the manga and it definitively can be wrong and even bullshit.
Soul don't have children, at least not with how the system was presented in the early stage of the manga.
Once a soul is sent to SS by a shinigami it goes to soul society without the memory of their past life. Soul in SS age and when they "die" they naturally reincarnate in the real world and the circle of life goes like that.
"Families" in SS are a group of individual with no real ties with each other. We need to tear apart the concept that your "parents" are your biological parents. Byakuya was taken by the Kuchiki family and was raised as a "Kuchiki" heir and he will not have children of blood to succeed the family. He had 'parents' as in people that cared about him and "raised him" in SS but he's one soul that come right from the real world just like anybody else.
It is without saying that the big 'families' of SS very likely take under their wings very spiritually gifted people when they arrive to SS. The reason why Rukia's admission in the Kuchiki family was special is because she wasn't one of those 'spiritually gifted' person. She was a commoner, a nobody, someone that got into SS without any special abilities and wouldn't normally have been considered at all to be a candidate to a Kuchiki heir.
It wasn't because Rukia wasn't related by blood to the Kuchiki family as the family is formed by people that aren't tied by blood to begin with, it was because she wasn't fit to be a Kuchiki.
Someone who die young will look younger once in SS than someone that look old.
For argument sake, let's say that 100 years in SS make your body look what we would consider 1 year older in the real world.
If someone die when he is 7 years old and is sent to SS he will preserve his body of a seven year old. That same seven years old could live for 1000 years in SS and look like a seventeen year old.
Another person that died at 25 years old will look like his older self once he arrives to SS. He will already look older than that seventeen years old looking guy that lived in reality for 1007 years.
I'd like to state again that those are fictive number to show my point.
