Bleach, just as title implies is about Ichigo(reference to his hair and how he would get beat up as everyone thought he has been bleaching his hair). Shinigami, Hollows, thats just part of the world and Ichigo currently does not belong to that part. That part is still present and will clearly play a huge part, but Ichigo does not need to always center around that one part of quite clearly huge universe.
If entire manga was JUST about guys dancing with swords in bathrobes, it would turn out badly(look at Naruto and what a stagnant mess it became, pulling same crap for last 400 chapters).
Bleach is NOT about shinigami. Its first and foremost about Ichigo and this so far gave quite a lot of insight into how Ichigo thinks and why he does what he does.

However, I shall dare to disagree. I recommend thet you read a few interviews with Tite Kubo. If you did, you'd know that he stated very clearly:
"The title wasn't Bleach when I decided to draw a story about Soul Reapers. This was before I drew the one-shot manga that appeared in Akamaru Jump. The weapon wasn't a sword, but a scythe. Only Rukia had a scythe and the other characters used guns. At that point, the title was Snipe (as in "sniper"). Right before I started drawing, I began to think that a sword would be better and realized I couldn't use Snipe as a title anymore. I began looking for a title that grasped the bigger picture. Soul Reapers are associated with the color black, but it would have been boring to use "black." "White", on the other hand, can suggest black as a complementary color. So I chose "bleach" to evoke the impression of the color white."
Secondly, it sounds as if you wanted to say that Bleach is a one character manga. However, that kind of manga requires a character with extraordinarily complex personality and thereupon a great psychologial depth, and an exceptionally brilliant plot skillfully applied to function on various levels – all that Bleach does NOT have. Ichigo was scintillating as long as we’ve seen him surrounded by and interacting with other shinigami who had colourful personalities. The Xcution arc merely exposes him as a flat and mindless character.
Finally, Bleach is a mainstream manga, created to provide pure entertainment, and as such, it should meet readers’ expectations (expectations being that Kubo will continue the shinigami story). Kubo failed to do that and I guess now he runs the risk of losing some fans.
