almost always the reason is one or multiple of these:
1) slower reproduction (humans will fuck anything and everything)
2) technical advancement being done by weak humans to overcome their weakness while the other races sat on their laurels
3) humans are simply focussed on war while the other races are not.
4) human religions be cray cray (exterminatus)

isn't it just authors wish fulfillment and the desire of the targeted readers to have a character that can't say "no" to anything and will serve the MC's every whim gratefully since they were "saved"?
logic has nothing to do with it, thus the "whys" and "hows" don't matter.

Because humans are average at a lot of things, they can adapt to a lot of situations. They're not as good as any other race at anything else, but because they're atleast decent in every single thing, they can adapt against any other race through those other means, while the other races can only do so if they work together, and they generally disliked each other too much to do that often.
Elves ? They mature way slower, have much less interest in advancing technologically, are usually considered as traditionalists, and simply put breed too little, and because they mature much slower, it's even less useful.
They're also usually very reliant on their forests for survival & guerrilla warfare, meaning that removing their forests would have pretty much the same effect as removing the buffalo from native americans would have.

The way they're also considered as prideful or xenophobic commonly, increases antagonism towards them and makes taking them as slaves and then breaking / molding them into servitude even more enjoyable.
The fact that they're beautiful for way longer than humans is another motivation for enslavement.
The fact that they're not considered as humans, and thus not really as... 'despicable' to their fellow humans, means less of a inner problem with it.
Religion also tends to stir up feelings between races.

But to put it as simple as possible, there's only three ways to prevent large scale enslavement of any other race, and that's
1) That race being very known to exact retribution for it, and they make it clear why they do it instead of just mindless violence
2) The leaders of the nation / region / cities want to maintain good friendships with those other races, and they crack down hard on anyone even attempting to enslave them, and make sure they don't survive to motivate others to do it
3) The borders between racial regions are heavily enforced by both sides, and they eliminate everyone who's not there on approved business and kill anyone who tries to enslave someone.

Basically, only power projection or the knowledge that enslaving someone from that race will get you and everyone you hold dear killed, will totally prevent enslavement of other races. And that'll only solve other races. If they can't get them, they'll probably try to enslave others from their own race for labor purposes, possibly POWs (which is somewhat different)

The real question is how there are any humans left after the rampant beastman/elf sex slavery?

The more attractive the mate, the more they get children (half-elves, half-beastmen, ...), the less actual humans there are in comparison.

The isekai world should be pretty close to full of fractional humans imo.
