Phoenix are not immortal. It's just that they have such an immense power, other creature can't see the end of it. For those smaller being, yes, phoenix are indestructible.
But it there's creature with even greater power (say, Cthulhu for example), phoenix would look just like any other creature that would eventually die.
Hime and Sylvia could have burned most of their power, so although they reached adult form (a phoenix), they don't have much power left
