If Nyouboi can transform into anything, I wonder why Goku only uses it in that form?

Probably because Goku isn't smart enough to transform it into anything else XD. A staff that can extend is all he needs really.

                        Finally, we get some info on Hazel's "weirdness"! I definitely wasn't expecting Hazel to be harboring the soul of a youkai in his body too.
