I would've agreed with you if Gray showed signs of insanity during the end of Tartaros arc but nothing happened that could have proved your points. He was quite sane even before and after his fight with Mard Geer despite using the devil slaying magic to the extreme so it doesn't make sense for him to lose his sanity just because he trained with Juvia for a few months.
So i guess in the Edgemaster's mind it goes something like this ?

Because he's clearly focused on getting his hands on the book of E.N.D.
He said this chapter his perfectly sane.
A character driven by vengeance cannot be considered sane.
Whether his attitude is just an act or him being possessed. Nobody knows.
But from the information that was given he's hellbent on getting his hands on the book. That's the primary reason (at least for now) for his actions. He's willing to do anything to reach his goals.
