If you acknowledge that Erza is like Batman your life will be easier. When Batman gets his ass out of every shitty situation you don't think "how the fuck did he had the exact gadget for that, or how did he plan before hand how to escape from that". You just yell "It doesn't matter, IT's fucking BATMAN, he can do anything". The same applies here.

Erza defeated kyouka without the 5 senses .. now that's an incredible feat with the use of the 'other' senses .. she done the "impossible" again !!

So Happy gives us the best explanation why Erza could beat Kyoka.. because she's Erza. That gave me a "Because I'm Batman." kind of vibe. Well glad that's over, though I hate how OP Erza is, and her fights make no sense, it's still badass to see a OP female character.
