Just finished it, and now theyre updating it

I was totally okay at first with this not being an actual romance when I started reading, he was a child, she was just taking care of him.
But then there was an interview that had "age-gap romance" in the illustrations and that kinda confused me.
And then Mashuu kinda confessed to her on ch. 22 and she rejected him on ch. 23 saying she couldn't return his feelings. Later she remembers his confession and cries thinking "Why can't we be together?"
You could argue that this was not about romantic love but still it looked romantic.
Then the author gives another interview and she says she has no intention of making it romantic and turning this into an "age-gap romance"??
I don't know if she changed her mind to not make this too controversial but calling it a romance for the marketing and all the other examples I mentioned, it was very misleading.
Still a very beautiful story, I finished reading not long ago and I'm still sad that it's over.

Is it okay for me to read the manga without watching the anime and understand it perfectly?

It is complete, not axed. It sets out with a goal in mind and ends the story in that.

MAL says there are 32 chapters. It seems no one wants to translate it. Also the manga has ended. The light novel hasn't though. I can only assume it has been axed. There is also a spin-off? with a highschool setting? Not sure what it is, that was just an assumption based on cover because there wasn't a description.
