Well, that's mostly issues to adapt LN, you lost parts being "unnecessary" for the whole plot but meaningful for the characters. But i don't think the mangaka cut out "EXTREMELY" important parts. Surely it misses for the core of the story, but it wouldn't have changed the final issue or situation of characters involved. Yui still "loses" in the end, even if she didn't convey her feelings into words in the manga.
In the LN, Yukino & Hachiman also have their date in the amusement park later on, here mangaka combined the "response" from Hachiman just after the dinner...
In the ova, it covers only the dinner without the date after that...
In the end, the LN is the entire story, and the manga, anime & ova are covering "majority" of it. But overall, it's well done, there is not really differences in ending, even if Yui interlude was impactful for reader, it isn't mandatory to include it for the manga.
I can't tell if this is fucked up or good.
