It's not even off-screen. Sukuna has nor need any development.
Sukuna's beef with Yuji has always been because they're literally the opposite when it term to how they see life. There is no change in Sukuna's character. He stated this when he fought Yorozu, if he lost, she can do anything she wants to him. Even marrying her. For Sukuna, he lost to Yuji, plain and simple, which means he acknowledge Yuji's view of life despite it being anti-thesis to his.
I have no idea why this is a surprise, this is the guy who is shown repeatedly to acknowledge his opponent despite not even being close to him, like what he did to Jogo or Maki. He knows who he is, he know why he live that way and when he lost he acknowledge defeat even when his defeat to Yuji isn't even 1v1.
